Veteran gourmet restaurant Minokichi, which has built up a three hundred year history since its founding in 1716, now offers a healthy menu of Kyoto cuisine using traditional techniques focusing on the theme of "Vegetables and Umadashi.“
"Umadashi" uses a "dashi" soup stock carefully drawn from Hokkaido "Rishiri Kombu" and "Makurazaki Katsuobushi“ as a secret traditional flavoring.
Experience Kyoto cuisine through the combination of "Umadashi" and ingredients that are available only in Kyoto--including seasonal vegetables for every season, yuba tofu, fu (wheat gluten cake), and sesame.
